I am by no means an expert but I worked at a restaurant and the head chef went to different places in Asia every year for three weeks and one of his favorite recipes that I learned how to do properly was tempura. I found a recipe for Tebaski --I would use extra firm pressed twice tofu instead of meat--but are these ingredients accurate? is there anything you would take away? 800 grams
chicken wings
1/2 teaspoon
ground black pepper
1/2 teaspoon
salt
1/4 cup
evaporated cane sugar (packed)
3 tablespoons
soy sauce
1/3 cup
sake
1 teaspoon
ginger juice (grate the ginger and squeeze out juice)
4 grams
garlic (~1 medium clove, grated)
1 tablespoon
black vinegar (or balsamic vinegar)
1 tablespoon
potato starch
vegetable oil (for frying)
2 teaspoons
toasted sesame seeds
