Reservar. 2 Cortar las cebollas, el ajo y los morrones en brunoise, las zanahoria, las papas y la panceta ahumada en cubitos y el chorizo en rodajas. 4 En una olla con aceite rehogar la cebolla y el ajo hasta que la cebolla esté casi transparente, y entonces agregar el morrón y la zanahoria. Agregar el vino y dejar reducir. 5 Luego, agregar la panceta, el chorizo, el mondongo y las papas. Añadir el agua y dejar reducir. Cuando la preparación llegue a su punto de hervor condimentar con pimentón, sal y pimienta, dejar cocinar por unos 10 minutos o hasta que la verdura esté blanda.
